Quality Sparkling Wine – Classic Method Rosé Brut
TERROIR: These vineyards are located in the hilly area of Oltrepò Pavese, facing southwest, at an altitude of 220 meters. The soil has a mixed texture of clay and silt, which provides structure and freshness to the wine. The vines, cultivated organically, have an average age of 20 years. The planting density is 4,800 vines per hectare, and yields are kept low to ensure top-quality grapes.
HARVEST AND VINIFICATION: The grapes are harvested by hand in late August, collected in small crates to preserve their integrity. After a brief maceration on the skins to achieve the rosé color, the grapes are gently pressed. The primary fermentation takes place in stainless steel at a controlled temperature. The second fermentation happens in the bottle, following the Classic Method, with the wine aging on the lees for 36 months to develop aromatic complexity and finesse.
APPEARANCE: Delicate onion skin pink
EFFERVESCENCE: Fine, elegant, and persistent perlage
NOSE: A subtle rose note in the background is intertwined with bold aromas of blackcurrant and morello cherry.
PALATE: The red fruits found on the nose carry through to the palate: morello cherry, black cherry, and redcurrant, all bringing their typical acidity and fragrance, reminiscent of the elegance of French cassis.
PAIRING: Ideal with fish carpaccio, delicate cured meats, beef tartare, and seafood dishes. It also pairs wonderfully with red fruit desserts and moderately sweet pastries.
SERVING: Best served in a half-flute glass at 8°-10°C.
